These include things such as keywords, on/off site optimisation, backlinks, content, regular changes, device friendly and much more.
SEO should be a priority for any website because if people find you via a web search and you offer what they are after, you will receive new web visitors which will potentially lead to more sales. Think about this, if someone searches something in your criteria and you are not appearing on the search, you miss an opportunity and they might find your competitor instead.
